This post isn’t really a recipe, but more of a good idea for a cake. Unfortunately it is not low carb.
I used Bob’s Red Mill Gluten Free Yellow Cake Mix and followed the directions on the back to make 2 9-inch round cakes.
I placed parchment paper in the bottoms of my pans to prevent sticking.
Once cooled I put 1 cake layer on a platter and added a layer of fruit then topped it off with the other cake layer.
Last I added a white dairy free frosting.
Store in fridge.
This cake got two thumbs up from the husband.
