I absolutely love fruit and was looking for a vegetarian dish that would be perfect for lunch and easy to pack for work. This was the winning recipe and if you are a fan of Quinoa you definitely need to try it.
1 cup cooked quinoa
1/2 cup blueberries
1/2 cup mandarin oranges
1/2 cup mango chunks
2 tablespoons olive oil
Juice of 1 lime
1 teaspoon honey
1 tablespoon fresh chopped mint leaves
Combine quinoa and fruit in a large bowl. In a separate bowl mix olive oil, lime juice and honey. Pour honey mixture over quinoa and fruit and mix well. Sprinkle chopped mint on top.
Feel free to add other berries and fruit.
