1 Minute Lemon Mug Cake – Low Carb & Gluten Free

My soon to be sister-in-law recently got me started on a lemon cake kick.  She picked lemon cake as her wedding cake and it sounded delightful!  So I resorted to making a lemon mug cake to curb the cravings.

1 Minute Lemon Mug Cake
Low Carb & Gluten Free

Ingredients:

1 TBSP coconut oil melted
1 egg
1 tsp water
1/2 tsp lemon extract
2 TBSP erythritol
2 TBSP almond flour
1 TBSP coconut flour
pinch of salt

Directions:
Mix all ingredients in a mug until thoroughly combined.

Microwave for one minute, or until done.

Makes 1 serving
