Last month when my family and I got together for a Keto Easter Dinner I realized that we would need a keto biscuit or roll on the table to accompany the feast. So this is what I made and I have resorted to calling them the low carb, gluten free version of Red Lobster’s Cheddar Bay Biscuits.
Low Carb – Gluten Free
1 1/2 cup Almond Flour
1 1/2 tsp baking powder
1/4 tsp salt
1/4 tsp pepper
1/2 cup shredded cheese cheddar
1/4 cup Heavy Cream
3 tbsp cold butter, diced
Preheat oven to 350 degrees
Mix Almond flour, salt, pepper, and baking powder.
Mash your butter into dry ingredients until it’s crumbly.
Add cream and egg and mix well.
Fold in shredded cheese and form into 6 balls. You can either place in a muffin tin or on a cookie sheet with parchment paper.
Bake for 20 minutes.
