So here we go with my absolute favorite low carb and gluten free dessert recipe so far. My husband says they taste like real cookies. I also took a couple to work and since then have been asked “do you have any cookies?” When I replied that I ate all of them I was told “I’m going to need you to make more.” 🙂 So I promise these are delicious!
Chocolate Chip Cookies
Low Carb & Gluten Free
8 oz cream cheese
2 Tbsp butter
1 Tbsp almond butter
3/4 cup erythritol
2 tsp vanilla extract
Pinch of salt
1 tsp baking powder
2/3 cup almond flour
1 scoop protein powder (vanilla, chocolate or cookies and cream)
1 cup low carb dark chocolate chips
Soften your cream cheese, almond butter and butter in the microwave, then mix well with hand mixer or stand mixer.
Add erythritol, vanilla, eggs, salt, and baking powder and mix well.
Next add almond flour and mix well.
As for the protein powder I used Plant Fusion brand cookies and cream, but the cookies would still be delicious with vanilla or chocolate flavored. Add in your protein powder and mix well. Plant Fusion has 4g carbs in one scoop, if you were to use a 0 carb protein powder these cookies will be even lower in carbs than the nutrition facts that I have listed at the bottom.
Next add your chocolate chips. I used Lily’s Dark Chocolate Chips.
Once everything is mixed well spoon 1″ cookies onto a cookie sheet lined with parchment paper.
Bake at 350 degrees F for 15 minutes or until edges are golden brown.
Makes 2 dozen cookies.
Store in fridge or freezer.
