Snickerdoodle Crepes
Low Carb & Gluten Free

Crepes:
6 eggs
5 oz cream cheese, softened
1 tsp cinnamon
1 Tbsp sugar substitute

Filling:
1 stick of butter, softened
1/3 cup sugar substitute
1 Tbsp cinnamon

Directions:

  • Blend eggs, cream cheese, cinnamon and sweetener in a blender until smooth. Melt coconut oil or butter in a frying pan and pour enough batter for a 6 inch crepe. Cook for 2 minutes on medium heat, flip and cook for another minute. Repeat this with the rest of the batter making about 8 crepes.
  • To make your filling, melt a stick of butter and add the sweetener and cinnamon, mix until smooth.
  • Spread 1 Tbsp of the filling on each crepe and roll it up.

Yield: 4 servings  –    Serving Size: 2 crepes

So I am officially 30….ugh. I do have to admit that I had a pretty good birthday though. I took the day off of work, made myself a few pretty tasty snickerdoodle crepes, tried a DIY self tanner, did a little shopping (“Treat Yo Self!”), and scheduled an appointment to get what will probably be my last tattoo. Then had dinner, drinks and saw a movie with my husband. Just an FYI, we saw Hot Tub Time Machine 2 and we wish we could get our money and 2 hours of our lives back. Then Saturday night I had a great time at the bar with my friends to celebrate…I’m definitely paying for it today!
